mango shrimp

 

MANGO SHRIMP

INGREDIENTS

  • 8 oz of shrimp
  • 1 Mango
  • 1/2 Teaspoon minced garlic
  • 1/2 Teaspoon minced ginger
  • Few pieces of cilantro
  • 1 1/2 Tablespoon of sugar
  • 1 Tablespoon sherry cooking wine
  • 1 Tablespoon of soy sauce
  • 2 Tablespoon of ketchup
  • 2 Tablespoon of water
  • 1 pinch of salt
  • 1 pinch of white pepper
  • 1 Tablespoon corn starch

DIRECTIONS:

STEP 1 – MARINATING THE SHRIMP

  • In a bowl, add the shrimp, salt, white pepper, corn starch and mix together.

STEP 2 – MAKE THE SAUCE

  • In a bowl, add the sugar, sherry cooking wine, soy sauce, ketchup and water and mix together.

STEP 3 – COOK THE SHRIMP

  • Add some cooking oil to the wok and cook the shrimp until it’s at least 80% cooked
  • Set the shrimp aside

STEP 4 – STIR FRY

  • Add onion to the wok, ginger and garlic and briefly stir them
  • Next add the partially cooked shrimp and the sauce from step 2 in the wok and stir everything evenly
  • Turn off the heat to the wok and then add the mangoes and few pieces of cilantro in the wok and briefly stir everything together
