MANGO SHRIMP
INGREDIENTS
- 8 oz of shrimp
- 1 Mango
- 1/2 Teaspoon minced garlic
- 1/2 Teaspoon minced ginger
- Few pieces of cilantro
- 1 1/2 Tablespoon of sugar
- 1 Tablespoon sherry cooking wine
- 1 Tablespoon of soy sauce
- 2 Tablespoon of ketchup
- 2 Tablespoon of water
- 1 pinch of salt
- 1 pinch of white pepper
- 1 Tablespoon corn starch
DIRECTIONS:
STEP 1 – MARINATING THE SHRIMP
- In a bowl, add the shrimp, salt, white pepper, corn starch and mix together.
STEP 2 – MAKE THE SAUCE
- In a bowl, add the sugar, sherry cooking wine, soy sauce, ketchup and water and mix together.
STEP 3 – COOK THE SHRIMP
- Add some cooking oil to the wok and cook the shrimp until it’s at least 80% cooked
- Set the shrimp aside
STEP 4 – STIR FRY
- Add onion to the wok, ginger and garlic and briefly stir them
- Next add the partially cooked shrimp and the sauce from step 2 in the wok and stir everything evenly
- Turn off the heat to the wok and then add the mangoes and few pieces of cilantro in the wok and briefly stir everything together
