Beef and Bitter Melon

 

BEEF AND BITTER MELON WITH BLACK BEAN SAUCE

INGREDIENTS

  • 2 lb bitter melon
  • 12 oz of steak
  • 1 Tablespoon of salt
  • 1 Pinch of salt
  • 1 Pinch of white pepper
  • 1 Egg
  • 1.5 Tablespoon of Corn Starch
  • 1 Teaspoon of cooking oil
  • 1 Teaspoon minced garlic
  • 1 Teaspoon of sliced ginger
  • 1 Teaspoon of black bean sauce
  • 1/2 Cup of white onions
  • 1 Tablespoon of sugar
  • 1/2 Tablespoon of Koon Chun Double Black Soy Sauce
  • 1.5 Tablespoon oyster sauce
  • 2 Tablespoon of Cooking sherry wine
  • 1 Teaspoon of sesame seed oil
  • 1 Tablespoon of corn starch + 2 Tablespoons of water

DIRECTIONS:

STEP 1 – SLICE UP THE BITTER MELON

  • Cut off the ends of the bitter melon and then cut it open
  • Remove the seeds with a spoon
  • Slice the bitter melon into small slices
  • Add 1 Tablespoon of salt to the bitter melon

STEP 2 – MARINATING THE BEEF

  • Slice up the beef
  • add a pinch of salt, a pinch of white pepper, 1.5 Tablespoon of corn starch, cooking oil and an egg

STEP 3 – BOIL THE BITTER MELON

  • Boil the sliced up bitter melon for 6 minutes
  • Next remove the bitter melon from the boiling water and put them aside

STEP 4 – STIR FRY

  • Put the sliced beef in the wok and cook the beef
  • Put the cooked sliced beef aside
  • Next put some 1 tablespoon of oil, minced garlic, sliced ginger, black bean sauce and white onions
  • Stir them all together for several seconds and then add the sliced bitter melon, sugar, soy sauce, oyster sauce, cooking sherry wine, and sesame seed oil
  • Mix together 2 Tablespoon of water and 1 Tablespoon of corn starch and then add some of that mixture to the stir fry to thicken the sauce to your preference
  • Stir fry everything together and then put the cooked sliced beef in
  • Next stir fry everything together evenly with the beef
